Benedetto Cavalieri Lumache is an Italian pasta in the shape of snails and is produced with a blend of durum wheat only.

The artisanal processing method called ‘delicate’.

A long kneading, a slow pressing, drawing and drying at a low temperature, permits to get rough and porous lumache, enhancing any kind of sauce.

Try it with a meat pasta sauce.

Benedetto Cavalieri Lumache can also be served stuffed and baked - much like you would cannelloni - and the best thing to do would be to stuff them with spinach and ricotta cheese.
