Benedetto Cavalieri organic wholemeal Linguine - aka organic wholemeal Spaghettine - is a long artisan pasta the name of which means "very small strings".
Linguine pasta is produced with a rigorous selection of wheats that grow in purposely chosen fields especially on the hills of Apulia and Basilicata. The durum wheat is cultivated without the use of chemical fertilizers.
Extruded through traditional bronze dies, this Benedetto Cavalieri organic wholemeal Linguine pasta is packed uncut and folded.
With a smaller section than normal spaghetti, Linguine pasta cooks in 7-8 minutes and keeps intact the flavor of wheat.

Linguine pasta - aka Spaghettine - is reminiscent of small rectangular flat spaghetti.
Great served with sauces of aromatic herbs - pesto Genovese - or sauces involving fish and/or mollusks.
The production method is called "delicate" and prevents the mechanical destruction of gluten and carbohydrates: a long kneading, a slow pressing, drawing and drying at a low temperature.
The organic whole wheat is dried at a low temperature which leaves intact the flavor of wheat and the lysine content, a fundamental amino acid.
Benedetto Cavalieri organic wholemeal Linguine pasta has a porous rough texture and is rich in starch.
The starch is absolutely critical for the sauce to stick to the pasta and gives it almost all of its flavor, particularly if you salted the pasta water as you are supposed to.
Never rinse pasta that is served warm with a sauce.
