"Butterflies" Pasta date back to the 16th century and are present in the culinary tradition of Lombardy, Emilia-Romagna and Northern Italy in general.
The Farfalle are one of the types of Italian pasta produced in the most original variations in size and even in colour, but they all have the characteristic "papillon" shape.
Usually the Farfalle are made from a rectangle of pasta with crenelated edges, while the central part is stapled.
This allows the Farfalle Pasta to have their characteristic shape and to exalt during chewing, the delicious contrast between the softer "wings" and the more consistent centre.
