The Chef has made the recipe famous far beyond the borders of Abruzzo, faithfully following the original fishermen’s recipe prepared and passed down within his family.
Brodetto alla Vastese, among all the various interpretations from the Adriatic Coast to Romagna to Molise, is the one with the fastest cooking time and freshest flavor.
In this broth, are used a fresh local tomato (ideally the Mezzo Tempo tomato) and the green horn pepper and there’s a vast range of fish and shellfish that are cooked whole, traditionally in an earthenware pot.

HOW TO COOK IT:
Warm the broth in a pan with high edges, adding a glass of water and slightly reducing it.
Cook the pasta in boiling salted water (4 portions of 80gr each of broken Spaghetti or Tubetti), drain it al dente and finish cooking by adding it to the broth.
