Toscana dei Tonni is a ready-made dish in a vacuum glass and made on a recipe by chef Davide Balduini - Mibabbo restaurant in Milan.
In the heart of Chianti area, families pass on the recipe for "fake tuna".
It is an ancient peasant preparation consisting of salting and marinating in olive oil of pork meat.
This process gives the consistency of the tuna to the pork meat.

HOW TO COOK IT:

Davide Balduini comes from a family of Tuscan restaurateurs who have passed down recipes and tradition that have served him well in Milan’s restaurant scene.
He began his career at his family’s restaurant before going on to work for many years in catering and events before opening his restaurant “La cucina de’ Mibabbo” in Milan.
