Toscana dei Tonni is a ready-made dish in a vacuum glass and made on a recipe by chef Davide Balduini - Mibabbo restaurant in Milan.

In the heart of Chianti area, families pass on the recipe for "fake tuna".
It is an ancient peasant preparation consisting of salting and marinating in olive oil of pork meat.
This process gives the consistency of the tuna to the pork meat.

RECOMMENDED USES:

served cold or lukewarm along
- with cannellini beans and sage,
- with a chestnut flour focaccia,
- with a side dish of potatoes.
- Ideal as an appetizer or main course.

HOW TO COOK IT:

Consume at room temperature, or in the microwave for a couple of minutes (removing the clips, the cap and the silicone gasket), or in a bain-marie (keeping the cap and the clips ).

Davide Balduini comes from a family of Tuscan restaurateurs who have passed down recipes and tradition that have served him well in Milan’s restaurant scene.

He began his career at his family’s restaurant before going on to work for many years in catering and events before opening his restaurant “La cucina de’ Mibabbo” in Milan.

Together with chef Roberta Magnani he proposes a traditional Tuscan cuisine, drawing inspiration from various territories of the region and pairing it with traditional preparations and contemporary techniques.
