Il Nero di Vittorio is a ready-to-use pasta sauce made on the recipe of Chef Luca Poma - Da Vittorio restaurant in Carloforte (Sardinia) - and preserved in glass with the vacuum technique.
For 40 years Il Nero di Vittorio has been seasoning the famous spaghetti of the Poma family in Carloforte.
Spaghetti alla Vittorio include the use of squid ink with scampi, tuna, squid and Ligurian pesto.
Pesto, which may seem to be not a typically Sardinian ingredient, is a legacy of the tabarchine culture of Ligurian origin, which has settled over the centuries also in some areas of Sardinia
- as a ready-to-use pasta sauce (especially spaghetti),
- as a sauce for risotto,
- on bread crostini
- with bottarga.
HOW TO COOK IT:
As a pasta sauce:
- heat the product in a non-stick pan, lengthening it with a spoonful of your pasta cooking water, drain the pasta when al dente and then blend it in the pan with the sauce.
As a dressing for bruschetta, croutons or with bottarga:
- heat the product in a non-stick pan, or in the microwave for a couple of minutes (removing the clips, the cap and the silicone gasket), or in a bain-marie (keeping the cap and the clips ).
Italian tomato, 9% tuna, 4.5% squid, 4.5% prawns, basil, Grada Padano cheese (cow’s milk, salt, rennet), extra virgin olive oil, onion, white wine, 0.9% squid ink, brandy, salt, acidity regulator: citric acid.

Luca Poma represents the second generation of the historic restaurant Da Vittorio on San Pietro Island in Carloforte, in the south of Sardinia.
