The “Red Tuna” (“Tonno Rosso” or “Tonno di Corsa”, Running Tuna) is considered the most exquisite among the tuna species. It is fished exclusively in the Mediterranean Sea between May and June. This Mediterranean Blue Fin (Thunnus tynnus) steak is fished in compliance with sustainable catch quotas. FAO fishing area 37.1.3. The tuna is selected individually, knife cut, canned by hand, and produced following the ancient process of the Sardinian Tuna Fisheries. Production is limited as fishing is subject to a quota system. Available in 350 gr metal box (240 gr drained).

Blue Fin “running” tuna (Thunnus tynnus) GOLD LINE, is a tuna steak preserve with an incomparable flavour.
The tuna is fished and produced in limited quantities by Tonnare P.I.A.M. in Carloforte, Sardinia.

The Tonnare P.I.A.M. control the entire process: the regulated fishing in the Carloforte traps, the processing of the fresh product carried out strictly by hand, the transformation into preserves in olive oil.

It is called "running tuna" or "going tuna" because in spring, this tuna, which is one of the fastest fish in the world, migrating from the northern waters of the Atlantic ocean, crosses the Strait of Gibraltar and enters the Mediterranean for the reproduction.

Females and males, ready for fertilization, in this period have the flesh at its maximum consistency.

The tuna remains stationary for 60 days in the blue waters of Sicily and Sardinia and then leave the Mediterranean in September after having fertilized the eggs laid by the females.
On this occasion the running tuna will instead take the name of "returning tuna".
