Bagnetto Verde - Italian Green Sauce
The Italian green sauce - Bagnetto verde - is a typical Italian ready-to-use sauce from Piedmont region.
In the past on the table of the Piedmont families the Bagnetto Verde was very common. Later this sauce has spread throughout Italy with the name of green sauce (in Italian "Salsa Verde")
The parsley, the main ingredient of this sauce, comes from the certified organic farms in the area of Alba and Roero.
The ready-to-use green sauce is a fresh, fragrant, creamy and delicious sauce. This thanks to the parsley that, on releasing the essential oils, is able to thoroughly mix all ingredients.
We suggest you taste this green sauce simply "opening" the jar and serving it.
During summer, according to the Piemont tradition, green sauce is combined with anchovies.
Together with red sauce, the green sauce is one of the typical sauces that should always be in pairing to the mixed boiled meats.
The green sauce is also excellent with grilled meats and tomini cheeses.

The etymology of the word takes us back to the word wet and then the verb get wet.
Eating boiled, it is customary to "wet" the meats in various sauces available.
Red and Green Sauces are exactly part of this sauce mix.
In addition to the parsley, a key ingredient of green sauce are anchovies.
Although it may seem strange, the anchovies are typical of the traditional Piedmontese cuisine!
Despite the distance from the sea, in the past, the anchovies coming in every village thanks to the heroic endeavour of "Acciugai" (anchovies sellers).
These Occitan hawkers started from Maira Valley and arrived in the villages of Piedmont, Lombardy and Veneto, selling anchovies bought in Liguria using as a bargaining chip, wheat, butter and cheese.
Nowadays there is a brotherhood of anchovy street vendors. In June, the anchovy hawkers fair takes place in Dronero, a small village of the Maira Valley (Cuneo).
